FLICKER-FLAME-IGNITE AND DELIGHT
When you think of dessert, don’t necessarily think of fire. But in the dessert world, fire is what captivated my senses in the sweet world of sin. Fire is part of the desire for dessert drama.
There is something comforting in the whole ‘dinner and a show’ atmosphere, but when it comes to the grand finale – I think dessert takes more than the cake, especially when it arrives to your table on fire. What could be more show-stopping than that?
It’s not the appeal of ingesting carcinogens – as much as it is eating what seems impossible. A torched dessert is magical adding a bit of sparkle mixed with mystery and intrigue all rolled into what is already coming from a world of fantasy. The majestic swirls of a meringue on a luscious lemon meringue pie or arctic igloo baked Alaska get their golden hue like a perfect tan. A crème brulee seems to get just the right amount of glass-like surface to break with your spoon. Whether it’s the flambeé action happening in a pan to create a buttery, brown sugar glaze on bananas foster or a velvety kiss to Kirsch or brandy on a cherries jubilee…. Fire isn’t just warming to the palate, it’s warming to the soul.
Maybe it comes from campfire marshmallows…our first introduction to fire meeting sugar into melted heaven. Or perhaps we are drawn to allure of something so hot and sweet that we tantalize our taste buds with a mix of textures, temperatures, blaze and glaze – we know that it’s kind of sensual. It’s a rollercoaster for the senses and a wild ride at that.
